Soft, puffed whole wheat rotis made from stone-ground atta - the everyday staple of Indian kitchens.

Ingredients
  • 2 cups NutriSelect whole wheat atta
  • Water (as needed, approx. ¾ cup)
  • Pinch of salt
  • Ghee or butter (for serving)
Method

    Combine atta and salt in a bowl. Add water gradually and knead into a soft, smooth dough.

    Rest the dough covered for 20 minutes - this is key for soft rotis.

  3. 03

    Divide into equal balls. Dust with dry atta and roll into thin circles.

  4. 04

    Cook on a hot tawa for 30 seconds until brown spots appear, then hold directly over flame to puff.

    Apply ghee immediately and serve hot.
